You can adjust the various knobs and dials in three ways:

Tap the blue LED number and then drag horizontally or vertically.
Tap a purple knob and then drag horizontally or vertically.
Tap the grey inc/dec buttons for precise adjustments, tapping and holding will cause an automatic incremental count that will speed up to steps of ten after a while.
